Here is another great healthy Quinoa recipe. I saw a similar recipe to this on pinterest but modified it to my own tastings. It came out really good. I had it as a dinner, but I think it would be better on a hot summer day for lunch or an afternoon snack.
Serving Size: 4
Ingredients
¼ Onion diced
½ Red bell pepper diced
1 Jalapeno diced
½ Can black beans
1 8 oz can of corn (or fresh)
1 cup quinoa (dry)
1 avocado, diced
Handful of Cilantro
Habanero Sauce
Lettuce
Cooking Directions
Cook Quinoa like normal and let cool
Chop all the vegetables and place in a bowl
Drain and rinse black beans and corn. Add to vegi bowl
Mix quinoa with vegis & black beans
Mix and Season to taste
Pull lettuce into equal size leafs
Fill each leaf with a few spool fuls of the mixture
Add a few dashes of habanero sauce to each wrap
